FAQ - Frequently Asked Questions

  • Wagyu refers to four Japanese cattle breeds — Kuroge Washu, Akage Washu, Mukaku Washu, and Japanese Polled — renowned for their extraordinary intramuscular fat (marbling). True Wagyu is graded on the Japanese BMS (Beef Marbling Score) scale from 1-12, with A5 being the highest grade. Our Wagyu ranges from BMS 6+ to BMS 12, sourced from Japan, Ireland, Australia, and the USA.

  • BMS stands for Beef Marbling Score — a 1-12 scale measuring the intramuscular fat content in beef. Our Irish Wagyu ranges from BMS 6+ to BMS 8+, Australian Wagyu scores BMS 9+, and our Japanese A5 Wagyu scores BMS 10-12. Higher BMS means richer flavour and more tender meat. All our Wagyu products display a minimum BMS of 5.

  • All orders are shipped in temperature-controlled packaging using 2-day tracked courier delivery. Your meat arrives vacuum-sealed and chilled, packed with ice packs and insulated wool liners to maintain the cold chain from our facility to your door. Orders placed before 6pm dispatch the next working day. Collection/local delivery is scheduled with the customer.

  • Yes. We stock various cuts of Halal steaks ranging from Wagyu to Premium Cuts such as USDA Prime. Please note Halal meat is cut in the same facility and equipment as non Halal.

  • Our Ways of Wagyu beef tallow is made with rendering the fat trimmings for our butchery, including A5 Wagyu. Tallow has a high smoke point (210C+), making it ideal for roasting potatoes, searing steaks, shallow-frying, and as a base for sauces.

    It is also used in carnivore and ancestral diets, as a skincare balm, and for seasoning cast iron cookware. Rich in CLA and fat-soluble vitamins A, D, E, and K.
